I'm a parent with two young daughters aged 5 and 7. We have 2 iPads and even before I bought them I purchased Otter Boxes for them. They literally went from out of the Apple box and into an Otter Box. Without the Otter Boxes I don't think our iPads would have lasted a week. They have been dropped down the stairs, fallen onto our concrete driveway, dropped in the mud, been chewed on, food spilled on them, etc. too many times to count. Instead of replacing iPads the good folks at Otter Box have sent me numerous replacement parts, and sometimes even brand new entire Otter Boxes all for FREE! No shipping charges, no hidden fees, nothing! I simply fill out an online warranty claim and most often the replacement parts (or new Otter Box) arrives within the week! As far as customer service and warranty goes Otter Box cannot be beat.
I purchased my first Otter Box for my iPhone 3 about 4 years ago, and have bought new Otter Boxes every time I upgrade my iPhone. I have an iPhone 5 now and it is in the Amour Series case which I think is the best one ever! Please let me know if you start making these for iPads as I will be the first in line to get 2 as it is only a matter of time before my girls drop the iPad in the bathtub...

On the iPad 4 case, can you remove the plastic that protects the screen? I already have a screen protector on my screen, the clear cover is glued on

No the plastic cover is part of the case. It may however fit over your existing screen protector, but I would test it first to see if the iPad would still be functional and/or respond to touch.

Does the 2 defender series iPad case keep water out and iPad dry

Need to know with all the defender2 iPad case can protect, dropping, etc does it have the ability to still completely dry function iPad?
Also can you hear out of it with that case, movies, tunes etc?
The Defender Series cases will definitely protect your iPad from from minor spills, but it is not waterproof! My daughters have spilled juice and milk on their iPads and I usually dry off the case as soon as possible and sometimes take the iPad out of the case to make sure no moisture got inside. So far so good! More than I can say for my MacBook Pro after my one daughter accidentally spilt water on it...

However I have an Otter Box Amour Series for my iPhone 5 and it is waterproof for up to 30 minutes at 6 feet! I haven't taken it swimming yet to test it out but my other daughter did drop it in the bathtub once and it survived! I'm just waiting for Otter Box to make these for my iPads and I'll be set!
